CHICK'N TIKKA MASALA featuring Butler Soy Curls



Chick'n Tikka Masala in a creamy rich aromatic sauce made simple, and vegan, with Butler Soy Curls. Alternatives to soy curls include tofu, chickpeas(2 cans) or plant-based chick'n. No rules, just yum. **note- ingredients list may look like a lot but it's mostly spices.

INGREDIENTS

(Marinade)

8 oz bag Butler soy curls

1 tsp ground cumin

1 tsp garam masala

1 tsp paprika

1 tsp garlic powder

1/2 tsp ground ginger

1 tsp salt

1/3 cup plain unsweetened non-dairy yogurt

(Tikka Masala)

2 cups rice of choice(Basmati)

1 sweet onion, chopped

1 Tbsp fresh ginger, minced

3 cloves garlic, minced

1 tsp ground cumin

1 tsp ground turmeric

1 tsp ground coriander

1 tsp paprika

1 tsp chili powder

1 tsp garam masala

3 Tbsp tomato paste

15 oz can tomato sauce

2 cups "no chicken" vegetable broth or water

1 cup plain plant-based cream or coconut milk

1/4 cup fresh cilantro, chopped

Vegan Naan, for serving

DIRECTIONS

1. Place soy curls in a bowl. Bring 2 cups of water to a boil then pour over soy curls. Let stand 10 minutes to rehydrate. Drain and pat dry, squeezing liquid out of the soy curls(I use my salad spinner to remove liquid then squeeze dry in a towel).


2. Return soy curls to bowl then toss with 1 tsp ground cumin,1 tsp garam masala, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp ground ginger, 1 tsp salt until well coated. Toss with non-dairy yogurt until well coated. Let stand 15-30 minutes before cooking.


3. Prepare rice according to package directions. Keep warm.


4. In a large skillet/wok over high heat with 2 Tbsp oil, stir fry soy curls approximately 5 minutes. Push soy curls to perimeter of pan then and add another 1 Tbsp oil to pan. Add onions and continue to cook soy curls and onions for 5- 6 minutes. Add garlic and ginger and continue to cook another 1 minute. Sprinkle remaining spices over soy curls and continue to cook 1 minute to release aromatics.


5. Stir in tomato paste, tomato sauce and broth ir water. Bring to a boil then lower heat to a simmer. Cover and simmer 10 minutes.


6. Stir in plant-based cream or coconut milk and continue to simmer until heated through, approximately 2 minutes.


7. Serve Soy Curls Tikka Masala over rice. Sprinkle with chopped cilantro and serve with vegan naan.
