Pumkin everything season isn't complete without a little Pumpkin Vinaigrette on your salad. In the fall I often make a Harvest Salad chock full of roasted root veggies, cooked farro or wheat berries, apple or pear slices tossed in pumpkin vinaigrette then topped with pepitas. Yum. Good luck not drinking this dressing straight out of the bottle.
INGREDIENTS
1/2 cup pumpkin puree
1/4 cup apple cider vinegar
2 Tbsp Maple syrup
1 tsp dijon mustard
1/2 cup extra virgin olive oil
1 Tbsp water
1 clove garlic, minced
1 tsp dried thyme
1/2 tsp salt
1/8 tsp pepper
DIRECTIONS
Wisk or blend ingredients until smooth.
