Although I love Mahatma brand yellow rice, I thought it was high time to make my own saffron rice. I absolutely love saffron rice and use it in many dishes I prepare. Saffron threads aren't cheap, but 1/4 teaspoon is all that is needed.
INGREDIENTS
1 cup jasmine rice
1 3/4 cups chicken flavored vegetable broth (I use Better Than Bouillon brand)
1/4 tsp turmeric
1/4 tsp saffron threads
Pinch of cayenne pepper
2 tsp lemon juice
1 Tbsp vegan fish sauce (or 1/4 tsp salt)
DIRECTIONS
1. Bring broth and all ingredients except rice to a boil.
2. Stir in rice, cover and reduce heat to low. Cook for 15 minutes. Let stand 10 minutes.
3. Fluff and serve.
