MA YI SHANG SHU


Also known as "Ants Climbing a Tree" is a simple Sichuan noodle dish using cellophane noodles (glass noodles), ground plant-based meat and scallions. You decide how much heat by adjusting the sambal oelek. Yum.


INGREDIENTS

5 oz cellophane/glass noodles

6 oz plant-based ground meat

1 Tbsp minced garlic

1 Tbsp minced ginger

1 Tbsp soy sauce

1 Tbsp corn starch

3-4 scallions, sliced

(Sauce)

1 cup vegetable broth

1 Tbsp soy sauce

1 Tbsp dark soy sauce(or additional regular soy sauce)

1-2 tsp sambal oelek


DIRECTIONS

1. In a large bowl, soak cellophane noodles per package directions. Drain. Return noodles to bowl then cut up a little using kitchen sheers.


2. While noodles are soaking, combine plant-based meat with garlic, ginger, 1 Tbsp soy sauce and cornstarch. Set aside. Prepare sauce by stirring together broth, regular and dark soy sauce and as mush sambal oelek you like(I used 2 tsp).


3. In a large skillet/wok over high heat, cook plant-based meat until well browned. Approximately 5 to 7 minutes.


4. Pour in sauce. Bring to a boil, then add noodles. Continue to cook until noodles have absorbed most of the liquid, approximately 3 minutes. Remove from heat.


5. Mix in scallions. Serve.
