GREEK STYLE TURKEYLESS BURGERS with Spinach, Feta, Tzatziki & Sundried Tomato Relish


Oh yum, these burgers were delicious. I used Trader Joe's Turkeyless burgers patties, deconstructed them and mixed them with Greek spices and spinach then formed them back into patties. I served them topped with Violife vegan feta cheese, tzatziki sauce and sundried tomato relish. Wicked good! Recipes for tzatziki, sundried tomato relish and Greek spice blend recipe included.


INGREDIENTS

4 Trader Joe's Turkeyless burgers

1.5 Tbsp Greek spice blend

4 ounces fresh spinach

Violife vegan feta cheese

4 buns

Shredded lettuce

Tzatziki

Sundried Tomato Relish


DIRECTIONS

1. In a large skillet over medium-high heat with 1 tsp oil. Saute spinach until wilted, stirring as needed. Remove from the heat, allow to cool then pat dry with towels to remove most of the moisture. Roughly chop the spinach.


2. Combine the chopped spinach, Turkeyless burgers and Greek spice blend in a medium sized bowl. Use your hands to mix the ingredients together then form them into 4 burger patties.


3. Cook burgers in a large skillet over medium heat with a little oil, for 3 to 4 minutes per side. Alternately cook them on a grill.


4. Serve the burgers on toasted buns topped with vegan feta cheese, tzatziki sauce, sundried tomato relish and shredded lettuce.


(TZATZIKI)

1/2 cup plain vegan yogurt

1/4 cup vegan sour cream (Tofutti)

3 Tbsp vegan mayonnaise

1 tsp dried dill

2/3 cup English cucumber, peeled, finely chopped(I use a grater)

1 clove garlic, minced

1/2 lemon, juiced

Salt & pepper to taste.


Drain finely chopped cucumber in colander to remove excess liquid then combine with remaining Tzatziki ingredients. Refrigerate


(SUNDRIED TOMATO RELISH) by Girl on the Range

1 cup apple juice

1/2 cup oil-packed sun dried tomatoes

1/4 cup brown sugar

1/4 cup apple cider vinegar

1/4 tsp allspice(or cloves)

1/4 tsp cayenne

1/4 tsp ground ginger

1/2 onion

1 garlic clove, peeled


Place the apple juice, just 1/4 cup of the sundried tomatoes, brown sugar, vinegar, allspice, cayenne, ginger, onion and garlic in a food processor. Puree the mixture. Add the remaining sundried tomatoes and pulse a few more times. Pour the mixture into a saucepan, and simmer the sauce over medium heat - stirring as needed - until reduced and thickened, approximately 30 minutes. Remove from the heat and add salt to taste. Refrigerate.


(Greek Spice Blend)

1 Tbsp oregano

2 tsp dried basil

1 tsp dried dill

2 tsp onion powder

2 tsp garlic powder

1/2 tsp salt

1 tsp black pepper
