Anything they can make we can make vegan. This simple seitan recipe is perfectly spiced for vegan gyros. Marinade recipe included. Makes 4 gyros so double it because you're going to want more.


3/4 cup vital wheat gluten

1.5 Tbsp garbanzo bean flour

1 Tbsp nutritional yeast

1/4 tsp baking powder

1 tsp onion powder

1 tsp cumin

1 tsp garlic powder

1 tsp coriander

1 tsp oregano

1 tsp paprika

1 tsp rosemary

1 tsp cinnamon

1/8 tsp black pepper

1/2 cup beef flavored vegan broth

1 Tbsp extra virgin olive oil

1 Tbsp tomato paste

1 Tbsp Bragg's/Soy sauce

1 tsp vegan worchestire sauce

1/8 tsp liquid smoke


1. Combine dry ingredients

2. Combine wet ingredients, then mix into dry ingredients. Mix until dough forms. Knead dough 3 minutes in stand mixer using dough hook on speed #2 (Alternately knead by hand). Let sit for 10 minutes, then continue to knead for 2 additional minutes.

3. Form loaf and wrap in parchment, twisting the ends.

4. Bring 6 cups beef-flavored vegan broth, 3 bay leaves and 4 peppercorns to a simmer. Simmer seitan loaf for 25 minutes, unwrap loaf and continue to simmer for another 25 minutes.

5. Remove entire pot from stove. Let gyro seitan cool completely in it's cooking liquid.

6. Remove loaf to container of cold water with 1 Tbsp Bragg's. Refrigerate for up to 1 week.

Juice from 1/2 a lemon

3 cloves garlic, minced

2 Tbsp fresh oregano, chopped (2 tsp dried)

3/4 tsp salt

1/4 tsp black pepper

Combine marinade ingredients then marinade in refrigerator for 1 to 8 hours before cooking.
