This rice pudding is so simple to make and no one will know it's vegan. Mix the ingredients together then bake it in the oven for an hour...done. So good.
1/2 cup arborio rice
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp cardamom (or nutmeg if preferred)
3 cups plain plant milk
14 oz can coconut milk
1/2 cup raisins (optional)
1. Preheat oven to 350°F
2. Stir all ingredients together in a baking dish.(I used a dutch oven)
3. Bake uncovered for 1 hour (pudding will be very wet). Remove and let stand for 30 minutes, stir then let stand another 30 minutes before serving. If cold pudding desired, let cool to room temperature, cover then refrigerate 6 hours or overnight.
