Craving lasagna but don't have the time or energy to make it? Try cooking refrigerated ravioli instead. I used Trader Joe's Vegan Spinach & Cashew Ravioli. Kite Hill makes a vegan ravioli too. Combine it with your favorite marinara sauce, some spices and vegan parmesan & vegan mozzarella then bake for 30 minutes. Lasy lasagna dinner is ready in no time. I served it with Vegan Caesar Salad


2 packages of vegan ravioli(if using frozen, you'll need to bake it longer ~40‐45 minutes)

28 oz marinara sauce or tomato sauce

1/2 cup water

1/4 cup non-dairy cream or milk(you can warm up vegan sour cream instead)

2 tsp Italian seasoning (1 tsp each dried oregano & basil)

1/2 tsp garlic powder

1 cup grated vegan parmesan cheese

7 oz vegan mozzarella cheese shreds


1. Preheat oven to 375°F. Lightly spray a lasagna pan (9"x13") with cooking spray.

2. In a bowl combine marinara sauce, water, plant-based cream, Italian seasonings, garlic powder and a pinch of salt and pepper.

3. Transfer 1/3 sauce mixture into baking dish. Place half the ravioli into dish in a single layer. Cover with parmesan cheese. Repeat with 1/3 sauce and remaining ravioli. Cover with remaining sauce, the sprinkle mozzarella sheds over dish.

4. Cover and bake 30 minutes. Remove cover and broil on high until cheese bubbly. Let stand 10 minutes before serving.
