Another classic dish veganized for cruelty free times. With all the new vegan products available, anything can be made vegan.
1 onion, chopped
1 clove garlic, minced
2 vegan Italian sausage, cut in 1/4 moons
1 cup chopped tomatoes
2/3 cup vegetable broth
1/3 cup vegan cream cheese
1 cup frozen peas
1 Tbsp chopped fresh basil (1/4 tsp dried)
1 Tbsp chopped fresh oregano (1/4 tsp dried)
Salt and pepper to taste
1/4 cup vegan parmesan
8 oz pasta of choice
1. Cook pasta according to package directions. Set aside.
2. In a large nonstick skillet over medium heat with 1 tsp olive oil, saute onion, garlic for 2 minutes. Add sausage and continue to saute approximately 3 to 4 more minutes. Add broth and tomato, then gradually stir in vegan cream cheese until melted.
3. Add peas, basil, oregano then reduce heat to medium low and simmer for 5 minutes. Season with salt and pepper
4. Stir in pasta, cook until heated through. Sprinkle with vegan parmesan cheese before serving.
