Need dinner in 30 minutes? Vegan cheezburger macaroni, reminiscent of hamburger helper but way better, is ready in a snap to feed the hangry mob.


1 onion, chopped

12 oz plant-based ground

2 cloves garlic, minced

1 tsp Italian seasoning

1 Tbsp tomato paste

15 oz can tomato sauce

3 cups "no beef" vegetable broth

12 oz elbow macaroni

1/2 cup plant-based milk or cream

7 oz shredded vegan cheddar cheese


1. In a deep skillet, saucepanor Dutch oven over medium-high heat with 1 Tbsp olive oil sauté onions for 2 minutes. Add plant-based ground and cook until well browned, approximately 7 to 8 minutes. Add garlic, Italian seasonings and tomato paste and continue to cook for 1 minute.

2. Stir in broth and tomato sauce. Bring to a boil. Add macaroni. Return to boil then cook, stirring frequently to keep pasta from sticking to pan, until macaroni tender(per package directions) and sauce has thickened slightly, approximately 6 minutes. Season to taste with salt and pepper. Remove from heat.

3. While macaroni cooks, place vegan cheese and plant-based milk in a microwave-safe bowl. Microwave on high for 1 minute. Wisk well. Continue to microwave for 30 second increments(approximately 3 times total), wisking well in between, until cheese sauce is smooth.

4. Stir cheese sauce into macaroni until well combined. Enjoy.
