Summer is about keeping it simple, so this little nutrient packed salad is a perfect accompaniment to just about anything on your summer menu. I used butter beans, but any bean of choice works too. No rules, just yum.
1 can/box butter beans
1/2 cup black lentils
2.5 cups sugar snap peas
2 green onions
4 Tbsp extra virgin olive oil
Salt and pepper to taste.
1. Cook lentils according to package directions. Cool before using.
2. Slice sugar snap peas and green onions on the diagonal. Drain and rinse beans.
3. In a large bowl combine all ingredients, including juice from the lemon, and toss gently. Season to taste with salt and pepper. I prefer to chill before serving, but that's optional.
