I've made coleslaw many different ways but tend to come back to my basic coleslaw recipe. Simple ingredients that just take a few minutes to prepare.
14 oz package of coleslaw mix or a combination of shredded green cabbage, red cabbage and carrots, approximately 6 cups
1/2 cup vegan mayonnaise
1 1/2 Tbsp apple cider vinegar
1 1/2 Tbsp maple syrup
1/2 tsp salt
1/8 tsp pepper
Wisk together vegan mayonnaise, apple cider vinegar, maple syrup, salt and pepper. Pour over cabbage & carrot mixture then toss until well coated. Refrigerate until ready to eat.
