Forget Avocado toast, these crunchy foldovers take avocado toast to a whole new level. A few ingredients make a tasty and quick lunch or snack you'll want to add to your "go-to" list whenever an avocado decides to ripen. Dip? Add a little lime juice to some vegan mayo and you have lime crema.
INGREDIENTS
1 burrito-sized flour tortilla
1/2 ripe avocado
1/4 cup roasted red peppers, sliced
2 Tbsp vegan cream cheese
Handful baby spinach
2 Tbsp Vegan mayonnaise
Dash of lime juice
DIRECTIONS
1. Lay the tortilla flat on a work surface and cut a slit from the center of the tortilla to the edge. Spread the mashed avocado onto 1/4 of the tortilla, season with salt, pepper and red chili peppers if desired. Follow by placing the roasted red peppers, spinach and cream cheese in each of the other three quarters.
2. Fold the tortilla up starting with the avocado quarter up and onto the roasted red pepper quarter. Fold onto the spinach quarter then finally over the cream cheese quarter.
3. Place a nonstick skillet over medium heat with 1 tsp vegetable oil. Once the oil is hot, add the folded over tortilla. Cook until the bottom side is golden brown, about 2 minutes, and then flip and cook an additional 2 minutes.
4. If using, mix vegan mayonnaise with a dash of lime juice. Serve Avocado Foldover with lime crema if desired.
