ASPARAGUS PUFF PASTRY BUNDLES by Bianca Zapatka


Super simple, delicious asparagus in puff pastry appetizers drizzled with balsamic glaze from Trader Joe's.


INGREDIENTS

1sheet puff pastry

1/2 cup vegan cream cheese

3 slices vegan cheese(I used Chao brand original)

1 bunch asparagus, trimmed

2 Tbsp plant milk or olive oil for brushing

Balsamic glaze(optional)


DIRECTIONS

1. Preheat oven to 425°F. Cut puff pastry into 6 squares. Spread vegan cream cheese onto each square, layer with 1/2 a slice of vegan cheese.


2. Toss asparagus spears in a little olive oil, salt & pepper. Add a 3 to 4 spears diagonally onto pastry squares then fold over.


3. Brush pastry with a bit of plant based milk and olive oil. Bake for 25 minutes. Drizzled with balsamic glaze if desired.
