This simple sweet and savory salad is a perfect dish on a hot summer day. Since there's no oil, you can pop it in the fridge to enjoy the rest of the week.
1 cup quinoa, cooked & cooled
1/4 cup balsamic vinegar
Zest from 2 limes
1 mango, diced
1 red bell pepper, diced
1/3 cup chopped red onion
1/4 cup coconut flakes
1/4 cup sliced almonds
1/4 cup raisins
2 Tbsp chopped fresh cilantro
1. Combine balsamic vinegar and lime zest and set aside.
2. Combine remaining ingredients in large bowl.
3. Pour balsamic and lime zest mixture over salad and gently toss to combine.
